La Pecora Vera

A historical recipe of our dairy, La Pecora Vera is a semi-matured, well-balanced and mediumflavoured pecorino made from pasteurised sheep’s milk only. The paste is semi-hard, smooth and doughy; it has a limited eye formation and a straw-yellow colour. Before sale, the rind is treated by hand with olive oilgrounds, which give it its distinctive brown colour.
