Il Frescoverde Pure Sheep with Vegetable Rennet

Insipired by acient medieval traditional methods, this pecorino cheese once matured is treated with extra virgin olive oil and sprinkled with a mix of aromatics herbs such as rosemary, mint, sage, savory, basil and coriander. All herbs are from the organic farm Principio Attivo in Carrara. Especially recommended for vegetarians.
