Il Baccellone Primosale di Pura Pecora
Baccellone is a fresh cheese made from pasteurised whole sheep’s milk, with a soft and compact white paste, round in shape with a straight heel. It has no rind, undergoes no maturation, and is immediately ready for consumption after a few hours in brine. With its delicate aroma, it is reminiscent of milk and cream; its fresh, slightly sour flavour is typical of our area and is historically linked to spring. The Baccellone derives from an ancient Tuscan recipe: the tradition calls for this cheese to be accompanied by fresh broad beans, shelled at the moment, and flavoured with a drizzle of extra virgin olive oil. A fresh delight!
