Il Pecorino Toscano PDO Stagionato
Aged Pecorino Toscano PDO can bear the fire branding after reaching 120 days of maturation. Only cheese produced, matured and packaged in compliance with the Pecorino Toscano Cheesemaking Regulations can be defined as such, guaranteeing the excellence of the product to the consumer. The straw-yellow-coloured paste tends to be crumbly, especially when the cheese undergoes a long maturation. On the palate, the flavor is lingering and the aroma distinct if delicate. The long maturation period inside the dairy’s cells makes it a naturally lactose-free pecorino, and gives the cheese its distinctive organoleptic characteristics. The rind is oiled several times by hand during the aging period thus giving the cheese a naturally maintained appearance.
