Pecorino Toscano PDO a Pasta Tenera
Pecorino PDO also has a tender form and benefits from a short maturation time and again is produced with milk that conform to the Consortium of Tuscany Pecorino producers criteria. The compact form has an opaque white colour, slightly chalky and is most invitingly tasty. The rind is red.
