Pascoli di Maremma

Pascoli di Maremma pecorino is produced exclusively with milk from the Tuscan-Lazio Maremma area. Its paste is chalky, slightly grainy and dry, pearl-white in colour. It is characterised by a medium savouriness and a balanced taste. The rind has a particular dark red colour, given by the combination of tomato paste and ground black pepper: this is an ancient preservation method taken from the Tuscan tradition.
