Il Pecorino Toscano PDO
Pecorino PDO also has a tender form and benefits from a longer maturation time and again is produced with milks that conform to the Consortium of Tuscany Pecorino producers criteria. The compact form has an opaque white colour, slightly chalky and is most invitingly tasty. During the maturation process, the cheese receives a series of treatments with olive oil which colours the crust a mottled brown.
