<p>Prendete il petto di pollo e fate delle fettine molto sottili (potete anche chiedere al vostro macellaio di fiducia), condite con sale e pepe, dopodiché<br />
aggiungete una fetta di mortadella per ogni fetta di pollo, una foglia di salvia e Il Pistacchio di Pura Pecora che avrete precedentemente tagliato a fette. A questo punto arrotolate le fette e con l’aiuto di uno stuzzicadenti, oppure anche legandole con dello spago da cucina, chiudeteli bene.<br />
Fatto questo disponete la farina su un piatto e passateci gli involtini prima di adagiarli in una padella già calda e oliata con olio e.v.o..<br />
Fate cuocere la carne a fuoco basso fino a quando non vedrete che l’interno sarà ben cotto.<br />
Servite caldo.</p>

<p>Prendete la ciotola, mettete dentro il macinato di manzo e conditelo con sale, pepe e timo.<br />
Con lo stampo o con un coppapasta grande formate un hamburger. A questo punto prendete la padella, meglio se in ferro, e metterla sul fuoco. Quando sarà ben calda mettete un filo d’olio e subito dopo disponete al centro l’hamburger facendolo cuocere su ambo i lati a piacimento. Dopodiché abbassate la fiamma al minimo, prendete il pecorino che avrete in precedenza tagliato a fette di circa 3-4 mm di spessore; adagiatelo sopra la carne e tappate con un coperchio per 3/4 minuti finché non sarà fuso.<br />
Servite sul piatto di portata accompagnato da insalata e salse.</p>

<p>Per la fonduta prendete un pentolino e grattugiate dentro il Pecorino Metello, poi aggiungete il latte e scaldatelo a bagnomaria fin a che non sarà sciolto, aiutandovi con una frusta per togliere eventuali grumi. A parte, pulite le cipolle tagliatele a metà e togliete la parte centrale, quindi tagliatele finemente e stufatele con olio e un pizzico di sale a fuoco lento in una pentola. Quando saranno quasi stufate del tutto, alzate la fiamma e<br />
aggiungete lo zucchero, quindi finite la cottura.<br />
Dopodichè, sempre a fiamma alta, aggiungete l’aceto rosso e lasciatelo sfumare.<br />
Prendete la Cinta senese e cuocetela, meglio se sulla griglia, a cottura ultimata scaloppatela con la lama inclinata di 45° (per avere fette più larghe).<br />
Per servirla prendete il piatto di portata, adagiateci sopra la misticanza creando un letto, a questo punto disponeteci sopra la Cinta scaloppata versandoci sopra qualche cucchiaio di fonduta. Per finire aggiungete la cipolla caramellata e servite il tutto ben caldo.</p>
