<p>Prendete il Pecorino e tagliatelo a cubetti di 4-5 mm di lato.<br />
Stendete la pasta che avete precedentemente preparato a mano girando la pasta e tirandola dall’interno verso l’esterno. A questo punto, se infornate in forno a legna, metteteci sopra il pecorino tagliato e infornate per 3 minuti; mentre se infornate nel forno elettrico precuocete la pizza per 7-8 minuti a 220° C, poi metteteci sopra il Pecorino tagliato e infornate finché non sarà sciolto tutto.<br />
Dopo che la pizza è stata tolta dal forno adagiatevi sopra le fette di pesce spada e le foglioline del timo limonato.<br />
Servite ancora calda con un filo di olio e.v.o. sopra.</p>

Servite calda con un filo di olio e.v.o. sopra.</p>

<p>Per la fonduta prendete un pentolino e grattugiate dentro il pecorino Pascoli di Pienza e Val D’orcia Stagionato, poi aggiungete il latte e scaldatelo a bagnomaria fino a che non sarà sciolto, aiutandovi con una frusta per togliere eventuali grumi.<br />

A questo punto, se infornate in forno a legna, metteteci sopra la mozzarella spezzata, i pomodorini tagliati in 4 e infornate per 3 minuti circa; mentre se infornate nel forno elettrico precuocete la pizza per 7-8 minuti a 220° C, poi metteteci sopra la mozzarella spezzata e i pomodorini tagliati in 4 e infornate finché non sarà sciolta tutta la mozzarella.<br />
Dopo che la pizza è stata tolta dal forno versateci sopra, con un cucchiaio, la fonduta e sopra adagiatevi il Lardo di Colonnata a fette.<br />
Servite calda.</p>

Dopo che la pizza è stata tolta dal forno adagiatevi sopra le scaglie di Pecorino al vino Chianti delle Colline Pisane D.O.C.G.<br />
Servite ancora calda con un filo di olio e.v.o. sopra.</p>

<p>Stendete la pasta che avete precedentemente preparato a mano girando la pasta e tirandola dall’interno verso l’esterno.<br />
A questo punto, se infornate in forno a legna, metteteci sopra la mozzarella spezzata e infornate per 3 minuti circa; mentre se infornate nel forno elettrico precuocete la pizza per 7-8 minuti a 220° C, poi metteteci sopra la mozzarella spezzata infornate finché non sarà sciolta tutta la mozzarella.<br />
Dopo che la pizza è stata tolta dal forno adagiatevi sopra la pera fatta a fette sottili e il pecorino Il Pepe Nero di Pura pecora a fette, anch’esse sottili.<br />
Servite calda con una grattata di pepe nero e un filo di olio e.v.o..</p>

Una volta infornata e cotta (3-4 minuti se nel forno a legna, 7-8 minuti se nel forno elettrico) tiratela fuori e, con l’aiuto di un coltello, apritela<br />
nel mezzo.<br />
Adagiate nella parte inferiore il Pecorino Stagionato a Latte Crudo e rinfornate per altri 2-3 minuti (se utilizzate il forno a legna lasciatela a<br />
“boccaforno”) fino a che il formaggio non sarà sciolto.<br />
A questo punto riaprite la focaccia e farcitela con le fette di prosciutto toscano e i carciofi.<br />
Richiudete e servitela con un filo d’olio e.v.o. sopra.</p>

<p>Setacciate e miscelate insieme le farine per un totale di 500 g.<br />
Sciogliete la metà del lievito in poca acqua se state utilizzando quello fresco, altrimenti unite la metà del lievito secco in 400 g di farine prese dal totale miscelato.<br />
Aggiungete lo zucchero, girate, aggiungete tutta l’acqua. Mescolate con un cucchiaio. L’impasto è molle e appiccicoso, così che deve essere!<br />
Girate pochi secondi fino ad amalgamare tutti gli ingredienti. Coprite l’impasto con una pellicola e fate lievitare ad una temperatura di circa 22 gradi (forno spento acceso da poco). Lasciate lievitare dalle 6 alle 8 h fino a quando l’impasto non avrà triplicato il suo volume (d’estate gli impasti lievitano più velocemente, d’inverno invece saranno più lenti). Il prefermento lievitato si presenterà molle, morbidissimo e pieno di bollicine in superficie. A questo punto incordate l’impasto pizza.<br />
Potete procedere sia a mano che con un planetaria o impastatrice.<br />
Incordatura a mano su un piano di lavoro versate il resto delle farine miscelate (100 g) precedentemente mescolate con il resto del lievito secco (se state utilizzando il lievito fresco scioglietelo in poche gocce di acqua) . Aggiungete il prefermento e con l’uso di una raschietta di metallo o un tarocco, sbattete ripetutamente l’impasto sul tavolo e giratelo su se stesso, ripiegandolo più volte senza aggiungere altra farina. Quando vedete che l’impasto inizia a prendere la corda, quindi a compattarsi e non attaccarsi troppo al piano di lavoro, aggiungete il cucchiaio di olio e infine il sale.<br />
Sbattete ancora l’impasto, piegandolo più volte con la raschietta fino ad ottenere una pasta che tiene la forma, pur essendo parecchio morbida ma non attacca eccessivamente al piano di lavoro: ci vorranno circa 10 minuti.<br />
Incordatura con impastatrice o planetaria inserite il prefermento in una planetaria o impastatrice, unite gli altri 100 g di farina unita al lievito (se state utilizzando il lievito fresco scioglietelo in poche gocce di acqua), usate la frusta K, date qualche giro a media velocità, in pochi secondi<br />
l’impasto pizza prenderà la corda. Rovesciate. Date un altro giro con il gancio e aggiungete l’olio e il sale. Girate ancora pochi secondi con il gancio e l’impasto è pronto. Rovesciatelo su un piano spolverato di farina 0. In questa fase potete aggiungere la farina, quanta ne richiede l’impasto, procedete però poca alla volta, date le prime due pieghe a porta foglio, piegando i due lembi il primo sopra e fate lo stesso con il sotto. Sempre spolverando l’impasto e le mani di farina date altre due pieghe ai lati richiudendo prima uno poi l’altro. Se l’impasto è ancora molle,<br />
spolverate di farina e date altre due pieghe sopra e sotto; e ripetete ancora l’operazione ai lati se il vostro impasto risulta ancora morbido.<br />
Quanta farina assorbe l’impasto dipende da una serie di fattori, non vi preoccupate! rovesciate quindi il panetto e vedrete che ormai ha preso la forma, lisciatelo in superficie. Spolverate di farina, coprite con una pellicola e lasciate lievitare a temperatura ambiente per ancora 1 h circa. Trascorso il tempo indicato, l’impasto si presenta rilassato e lievitato, morbido, seppure compatto.<br />
Il vostro impasto pizza è pronto per realizzare la vostra pizza.</p>
